Calliope Bar in Manhattan's East Village serves what it calls "European farmhouse food," like Ricotta and Chard Dumplings and Rabbit Pappardelle. The owners are Eric Korsh, formerly the executive chef at the Waverly Inn, and his wife Ginevra Iverson, recently a cook at Prune.
